We were attracted by this region as it has two virtues for the production of great white wines: the altitude which preserves the level of grape’s acidity and the right to cultivate a grape variety which is very aromatic: the Rolle, a variety that is forbidden in the other parts of the Rhone Valley. We combined the Rolle with white Grenache for a good structure.
Our wine making process is aimed at the preservation of the natural fruitiness of the grapes: a direct wine pressing and racking at less than 10°C. We inhibited the malolactic fermentation in order to keep a correct acidity.
This wine is a continuous invitation to insouciance. Its airy yellow color, its vivid fragrances which switch from white peach to grapefruit, iris and jasmine, and its lightness on the palate contribute to a complete happiness of drinking.
This wine can be kept for three years, but we would give you the following advice: don’t keep it, drink it !
Serve at 10°C.
